Two common ways of finding the height of the COM:

Approximate it as 40% of the height of the vehicle (this is what Expert Autostats does).

Lift one end of the vehicle off the ground and measure forces and geometry as described in, say, the Northwestern Traffic Institute AR books by Baker and Fricke.
