Delta V

I am a dcctor involved in treating crash victims and have been trying to
calculate G forces in crashs involving some of my patients.
My question relates to a crash which involves a residual speed but not
necessarily in the same direction as the initial vehicle travel. Could
someone please tell me how I account for this in my calculations of delta V?
For example I understand that the Princess Di crash involved an impact speed
of about 60mph (100Kph) with an exit speed on about 10 mph (16kph) in a
different direction to the initial approach with an approximately 80 degree
deviation to the right. What would be the delta V?
Alternatively (different sceanrio)assuming an approach velocity of 60 kph
and a residual speed of 20 kph what would be the delta V for changes in angle
of collision departure relative to initial direction of 45, 90, 135 and
180 degrees respectively?
