Steve:

Whenever a high performance Ninja class motorcycle overturns,
upright itself and then takes off as you described, suggest you consider
checking if both throttle cables as well as the return spring are all still in
place and functioning properly.

Engine restart is common under these conditions depending upon gear
position at time of overturn.

Anyway, what ever you may have here, this is only an initial suggestion.
